As much as I love to eat sweets, nothing satisfies me more than a bomb salad! Not a wimpy salad though. I like a salad that touches as many food groups as possible. Growing up, my Ma’s salad would consist of iceberg lettuce, tomatoes, cucumbers, boiled eggs and cheese. I remember always opting out of the egg portion when I was younger. I remember being confused as to why someone would want to add something like that to a fresh salad? As time passed, I grew to love eggs in my salad immensely.
Salads have always been a big part of my daily routine so I had to come up with a quick, easy to make version that I wouldn’t grow tired of easily.
